Our delectable anchovies are fished on the northern Cantabrian coast of Spain. Sustainably caught by a small fleet of boats, this artisanal productis individually filleted and hand sorted by the‘Sobadora’ women who have artfully processed the anchovies through generations-old, traditional techniques.
